From County Limerick, Ireland
3 cups all purpose flour
1 teaspoon baking powder
4 tablespoon unsalted butter, cut into pieces
1 cup milk
1 egg
Preheat oven 350.
Sift flour and baking powder into a large bowl. Work in butter with fingers until fine crumbs. Make a well in center.
Lightly beat milk and egg in small bowl; pour into well saving 1 tablespoon of liquid. Work in until dough is formed.
Turn dough out onto lightly floured surface. Knead gently until dough hold its shape.
Roll dough to 10 x 18 inch rectangle; transfer to baking sheet with a large spatula. Score with a small knife into 2 inch squares. Do not cut all the way through. Brush dough with reserve milk mixture.
Bake until light brown – 25 min.
Break into squares and serve with warm jam. Makes 20.
